Move over kale; there’s a new “It veggie” in town. Cauliflower has been popping up on restaurant menus more and more, elevating it from a boring vegetable to the latest foodie trend. Cauliflower’s appeal is that is works as a healthy, no-carb substitute for many starches (potatoes, rice, etc.). I’ve used cauliflower for years as a mashed potato substitute, and love the cauliflower rice from Trader Joe’s (if you can get your hands on it; even staff say its always sold out!). I’ve now been dying to prep it for pizza crust.

January 15, 2016 at 12:04 PMI love the cauliflower rice! I make it in my food processor with the grater attachment. It’s so easy, and I feel less guilty than eating the empty carbs in white rice 🙂
