The title of this post is so incredible that it almost sounds like click bait, right? Ha! I’m so insanely excited to share this Nutella and raspberry stuffed grilled cheese with you in partnership with Castello Cheese because let’s be honest: it’s basically everything delicious, all wrapped up in one incredible sandwich.
I rarely make dishes like this at home because it’s almost too decadent but then it hit me: brunch! Or holiday meal! This yummy sandwich is so simple and quick to make, and instead of a traditional sandwich, simply cut each one up into little squares for bite-size indulgent treats. Serve this alongside mini egg frittatas (I make them in mini muffin tins) or quiche, plus some mimosas and you have yourself a delicious brunch that didn’t require hours of prep work.
Castello initially suggested this Nutella & Raspberry stuffed grilled cheese with Havarti but I swapped it out for its creamy double truffle cream and lordy is it delicious! Personal preference…. you can’t go wrong either way.
Stuffed Grilled Cheese Recipe:
Thick slices of bread (I used brioche)
1 tbsp butter
1 1/2 ounces of cheese, I used Castello Double Cream White; Havarti also would be great)
2 tbsp Nutella
1 tbsp Raspberry jam (I used a raspberry & strawberry jam from Sarabeth’s)
Heat a griddle or large pan on medium high heat until hot, then lower to just above simmering and let sit for 3 minutes.
Meanwhile, butter the outsides of your bread, spreading evenly to the edges. Place butter-side down and top one slice with cheese, and the other with Nutella.
Place both slices butter-side down in pan and cover with a lid. This will help your cheese to melt without burning your bread.
Let it grill approx. 3-4 minutes, keeping an eye to be sure bread doesn’t get too toasty and cheese is melting well.
Just before taking the grilled cheese off the heat, spread the Nutella side with a spoonful of jam. Remove both slices from heat and sandwich together.
Cut in half or bite-size pieces. Serve immediately. Hear talking cease, and watch smiles appear!
