Maybe that it’s officially Fall, maybe it’s that I’ve had a terrible cough situation for about two weeks now, but the idea of a warm soup sounds so yummy and cozy. Yup, cozy. Grab me a blanket, a warm soup and let’s call it a night. Best of all, enjoy one of these without spending a day in the kitchen, and without slurping up 1,000 calories per serving. These soups are healthy, satisfying and easy to prepare this fall. Leave each one as is or top with a little something extra (be just mindful of servings). I love adding a slice of avocado, for example.
And, while I’m not a girl who tends to freeze things — I am a leftovers kind of girl, at least — soups tend to be great for freezing so put them in single serving or small serving containers so you can enjoy all season.
