Cauliflower Is The New Kale

Move over kale; there’s a new “It veggie” in town. Cauliflower has been popping up on restaurant menus more and more, elevating it from a boring vegetable to the latest foodie trend. Cauliflower’s appeal is that is works as a healthy, no-carb substitute for many starches (potatoes, rice, etc.).  I’ve used cauliflower for years as a mashed potato substitute, and love the cauliflower rice from Trader Joe’s (if you can get your hands on it; even staff say its always sold out!). I’ve now been dying to prep it for pizza crust.

    I actually really like cauliflower, like way more than kale:), but I haven’t used it much except in soups (in place of potatoes). Definitely need to try some of these recipes, they look so good! Have a great weekend, Alyson! Xo

    I love the cauliflower rice! I make it in my food processor with the grater attachment. It’s so easy, and I feel less guilty than eating the empty carbs in white rice 🙂

    I am totally on board with getting rid of kale! Except for the Kale Beyonce sweater because I still want that!

    I tried making mashed potatoes out of cauliflower once and it was a complete disaster! Ha!
