Halloween Cocktail: A Spooky Berry + Pomegranate Jello Martini

Halloween is just days away and if you’re like me chances are you’re rushing out to stock up on candy for the trick-or-treaters. I love walking around our ‘hood, hanging with neighbors, seeing all the cute costumes, sampling the treats, and embracing where we live. It’s a fun way that’s about the kids and adults alike, the later when you embrace the “drink-or-treat” concept! Oh yes. Think anything from your favorite vino to pumpkin jello shots (yum!) or today’s cocktail feature.

We often meet back at a friends place (well, and have one in a portable cup for the treating!) so this year, to get inspired, I enlisted the help of my talented friend Michelle from Cupcakes, Cocktails & Kids to share a spooky good Halloween cocktail.” With Halloween being on a Saturday this year, there’s even more opportunity to let the kids play a little later and the adults have a fun night, too. Best of all, no driving!

This Berry + Pomegranate Martini from Michelle is the perfect treat for entertaining friends on Halloween. The flavors are sweet, so give the kids the twizzlers and you stick to this. Since the actual Jello doesn’t have alcohol you don’t have to worry about making separate batches for kids and adults {huge time saver!}. She thinks of everything!

Ingredients

  • 1 box of Raspberry Jello
  • 1 cup of sparkling pomegranate juice {I used Izze Sparkling Pomegranate}
  • 1 cup of berry flavored vodka {I used CIROC Berry}
  • 4 oz. triple sec
  • 2 teaspoons fresh lime juice
  • 3-4 teaspoons of pomegranate seeds for garnish

Directions:

Prepare your Jello as per the box instructions except for the last step – instead of adding 1 cup of cold water add cold sparkling pomegranate juice. Use a large rectangular dish mold to set the Jello. Once fully set cut the Jello into small square pieces. Add 1 to 2 squares of Jello per martini glass and place back in the fridge.

In a cocktail shaker, combine ice cubes, vodka, triple sec and lime juice. Shake well to mix. Strain into the chilled martini glasses and garnish with pomegranate seeds.
